Apricot Bar Cookies

This recipe for Apricot Bar Cookies is one that Donna Tinley shares with friends when she mails out her Christmas greetings.

1 1/3 cups sifted flour, divided
1/4 cup sugar
1/2 cup butter
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup brown sugar
2 eggs, beaten
1/2 teaspoon vanilla
Small jar apricot jam
1/2 cup chopped walnuts
Powdered sugar
Candied cherries
Preheat oven to 350 degrees

Combine one cup of the flour with the sugar and butter. Mix until crumbly. Press into a greased 9-inch by 9-inch pan. Bake for 18 minutes. Sift the remaining 1/3 cup flour and add the baking powder and salt. Slowly blend the brown sugar into the beaten eggs along with the vanilla. Add the sifted flour and blend.

Combine the jam and walnuts, and spread over the baked dough. Pour the batter on top and bake for 25 minutes.

Cool in the pan on a wire rack. Cut into bars using a wet knife and roll in powdered sugar. Place half a candied cherry on top.
